Tonight for dinner I cooked. I made Steamed Lemon Pepper Scallops and Asparagus. To make this dish I use 1 pound of scallops and 1 bunch of asparagus. Tonight I used white asparagus. I sprinkle the scallops and asparagus with lemon pepper. I use my power pressure cooker XL and mix 1/3 cup of lemon juice and 2/3 cup of water. I place the scallops on the bottom rack and then on the top rack I place the asparagus. I use the vegetable and sea food setting and set it for 2 minutes. Once it is done I played it up and enjoy. I know I am the one that does the cooking but in my opinion this dish is awesome. Very tasty and the lemon pepper adds just the right touch of spiciness. My only criticism tonight would be that I wished I would have used green asparagus instead of the white.
