Tonight for dinner I cooked Spicy Ginger Teriyaki Chicken breast with Creole and Asiago fingerling potatoes.
I prepared the chicken breast by marinating them overnight in a mixture of ginger, honey and spicy ginger teriyaki sauce.
For the fingerling potatoes I sprinkled them with Creole seasoning spice and shredded Asiago cheese.
As far as cooking I used my Power Pressure Cooker XL and for the liquid I used the remaining spicy ginger teriyaki sauce. I placed the chicken breasts on the bottom rack and the fingerling potatoes on the top rack. I used the chicken setting and cooked for 20 minutes. Once the fingerling potatoes were done cooking I sprinkled them with additional shredded Asiago cheese.
I thought this was an amazing meal. The potatoes were nice and tender and the Creole season added a nice spicy kick. The cheese was also a nice touch. The chicken breast was nice and tender and the sweetness of the honey and teriyaki paired nicely with the ginger and spice.
I thoroughly enjoyed preparing, cooking and eating this meal.
